Why is it Important to break images down into simpler shapes?

We often find everyday things like our hands difficult to draw and this is because we think that we know what something looks like since it is so familiar- the strength of our mental image is stronger than the actual visual in front of us.

I watched this video to understand more why we break images down into shapes and how this can help us stop focusing on the things that aren't there, which is the biggest hurdle I face when trying to sketch.
